Fish with herb sauce

Poach (boil water, turn off heat, insert fish until done)
1-2 lbs of firm white fish
Cook
XX green lentils
Sauce: food process together:
6 Tbsp lemon juice
6 Tbsp olive oil
3 Tbsp fresh basil
3 Tbsp fresh chives
3 Tbsp fresh parseley

Tomatillo sauce

For each batch,
Heat:
2 tsp oil
Sautee until beginning to brown, about 5 minutes:
2 cups onion
Add:
3 cups tomatillos, quartered or halved
2 tsp sugar
2 Tbsp garlic
1 tsp salt
Cook for about 30 seconds, then add
1 cup water
When all tomatillos looked not bright green, run through food processor. Package in pints and freeze

New England Spider Cake

Preheat oven to 350 degrees
Combine and set aside:
2 cups milk
4 teaspoons white vinegar
In mixing bowl, combine:
1 cup white flour
3/4 cup fine cornmeal
3/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt
Whisk into sour milk:
2 eggs
Stir liquids into dry ingredients.
Melt in 12 inch cast-iron skillet:
2 Tbsp butter
Pour in batter.
Pour into the center:
1 cup heavy cream
Slide into oven and bake for 45 minutes. Slide into wedges and serve.

Whole wheat muffins (with blueberries)

Preheat over 400 degrees.
Melt and set aside:
1/4 cup butter
Sift together:
1 cup white flour
1 cup whole wheat flour
2 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
mix separately:
1 egg
1 cup milk
melted butter
blueberries (optional)
Combine until flour is moistened, not smooth.
Spoon into muffin tins 2/3 full.
Bake 25 minutes.

Carrot cake

Preheat oven to 350 degrees
Beat together:
1 1/2 cups sugar
1/2 cup vegetable oil
1/2 cup applesauce
4 large eggs
Add:
1 cup white flour
1 cup whole wheat flour
2 tsp baking soda
>1 tsp cinnamon
>1 tsp ground ginger
1/2 teaspoon salt
Stir in
4 cups grated carrots
1 cup walnuts or pecans
Grease two standard loaf pans, pour in equal amounts, bake about 45 minutes until tester poked in center comes out clean.

The family waffle and pancake recipe

Mix:
1 cup whole wheat flour
1 cup white flour
1 Tbsp baking powder
1 tsp salt
1 Tbsp sugar
3 egg yolks
1/2 cup oil
1 1/4 cups milk (for waffles)
2 cups milk (for pancakes)
Fold in:
egg whites, beaten until stiff
Add blueberries or other fruit if desired
Cook on griddle/waffle iron. Eat. Yum.


Half recipe (pancakes):
1/2 cup whole wheat flour
1/2 cup white flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp sugar2 egg yolks
1/4 cup oil
3/4 cups milk

Polenta

Bring nearly to a boil:
3 cups milk
1 Tbsp butter
1 tsp sugar
1/2  tsp salt
Stir in slowly:
1 cup polenta cornmeal
Stir constantly until mixture pulls off of the pan side

Melt and set aside:
3 Tbsp butter
Mix:
1 cup white flous
1 Tbsp sugar
1/4 tsp salt
Add:
1 cup milk
1/3 cup water
melted butter
3 eggs

1/4 cup ketchup
2 Tbsp sugar
1 Tbsp rice vinegar
2 tsp lime juice
1 tsp soy sauce
1 tsp Worcestershire sauce

The really good tomato soup

In a soup pot, melt:
6 Tbsp butter
Add:
1+ cup onion, diced
1+ Tbsp basil
Cook 5 min until onion is transparent and threatening to brown. Add:
2 28 oz cans of diced tomatoes, with juice
4-ish Tbsp tomato paste
a quart to a quart and a half of chicken stock, more or less
Cook for about 10 minutes (more depending on how much chicken stock you added), then immersion blend the soup.
Add:
3/4 cup of rice, cook for 11 minutes
Add
1 cup milk (or some cream)
salt to taste.
